These mushrooms are grown by Shogun in London, Ontario. Maitake is a notoriously challenging mushroom to cultivate consistently. In order for us to be consistent for the chefs that support us, we purvey mushrooms from other local high quality producers like Shogun, to fill in the gaps in our production.
